You’ll probably be hearing more about this gooey pastry called semla in the next few weeks on various blogs here. Usually sold a few weeks leading up to Lent and mostly consumed on Fat Tuesday, semlor (plural) are designed to fatten you before fasting for 40 days. That didn’t stop my husband and I from digging into a couple semlor way before the season.


During the winter months of January through March, you’ll find these oval-shaped cardamon buns (called semlor) in bakeries and cafes all over the country.
