Västerbotten cheese cream with Almond potato chips

Ingredients
  • 2 dl (1 cup) cream cheese
  • 100 g (3½ oz) grated aged Västerbotten cheese
  • salt
  • 3-4 small almond potatoes
  • Kalix roe
  • chives
  • red onion
Instructions
Västerbotten cheese cream:
  1. Blend all the ingredients in a food processer into a smooth cream.
Almond potato chips:
  1. Slice the potatoes thin with skin still on, on a ”mandoline” or a slice machine. Put on a silicate sheet, salt and spray with olive oil, cover with another sheet. Bake in oven at 150°C/300°F for about 10 min.
Presentation:
  1. Garnish with Kalix roe, chopped chives and red onion.

Fried isterband and warm kohlrabi salad with mustard cream

Isterband is a coarsely ground, lightly smoked sausage from Sweden. It is made of pork, barley groats and potato.
Ingredients
  • 10 pieces of smoked sausage (Swedish isterband), fried
  • Warm kohlrabi salad:
  • 1 kohlrabi
  • 300g (10½ oz) of Västerbotten cheese
  • thyme (fresh)
  • salt
  • pepper
  • olive oil
  • 1dl (½ cup) sunflower seeds
  • Mustard cream:
  • 1dl (½ cup) mayonnaise
  • 2dl (1 cup) sour cream
  • 2 tablespoons mustard
  • salt
  • pepper
Instructions
Kohlrabi salad:
  1. Peel the kohlrabi and cut it into pieces.
  2. Mix the kohlrabi pieces with salt, pepper, thyme and olive oil.
  3. Place the kohlrabi on a baking tray and bake at 225°C/440°F for about 20 minutes. Grate the Västerbotten cheese.
  4. Toast sunflower seeds in a dry pan.
  5. Pour the kohlrabi in a bowl with the grated cheese. Season with salt and pepper and top with the toasted sunflower seeds.
Mustard cream:
  1. Mix all ingredients thoroughly.
  2. Arrange as shown.

This appetizer was created by Sweden’s minister for trade, Ewa Björling.
Ingredients
  • 500g (1 lb) crayfish tails
  • 70g (2½ oz) Västerbotten cheese
  • crème fraiche
  • salt
  • cayenne pepper
  • black pepper
  • dill
  • cumin
Instructions
  1. Drain crayfish tails carefully and chop them finely. Grate the Västerbotten cheese. Mix cheese and chopped crayfish with enough crème fraiche to make it stick together. Add salt, cayenne pepper, black pepper, dill and cumin to taste.
  2. Serve with newly toasted bread

Västerbotten pie/pizza with cumin flavor and onion herring

Ingredients
  • 10x20cm puff pastry
  • 1-2 egg yolks
  • 5dl (2 cups) Västerbotten cheese, grated
  • 2 tablespoons cumin seeds, lightly crushed
  • 250g (8¾ oz) pickled onion herring in bits
  • 1 red onion, chopped
  • herbs and chard shoots
Instructions
  1. Roll out puff pastry.
  2. Brush with egg yolk.
  3. Sprinkle with cheese and cumin seeds, bake at 200°C/400°F in the oven for about 15 minutes.
  4. Allow to cool and then cut into 20 smaller squares.
  5. Arrange with a piece of onion herring, sliced red onion and herbs on the pie.
